HIBI means “days.” It started with a small bakery our grandparents ran. Now it lives in an old ruin in Cabanatuan, with specialty coffee and carabao milk from Nueva Ecija, horchata from the province’s own rice fermented into koji, and bread baked every morning. Our cakes were developed together with a Japanese pâtissier. Open to everyone. Dogs and cats welcome at our outside seats.
